If creating a man champion, does the low 'Will' matter and if so, is there any way to increase it?

The race of your character has very little effect on your character. The lower/higher stats are so tiny at the endgame that they make no difference. I would just pick the race that you like the most.

Will is not a particularly important stat for Champions anyway. Might is their primary stat for increasing damage. There will be many ways to increase will through items.

Each race does have its own special skill which can be useful, however, still minor. The best one, in my opinion, is the hobbit one that lets them fake being dead. You can stop a monster from attacking you with this. Champs can't be hobbits, though, so this is best for a class like a minstrel.

Champions don't really need Will so you shouldn't stress yourself with it. Primary stats for damage-based Champion builds should be Might, Critical Rating, and Agility, while tankier builds should focus more on Might, Vit, and Morale. SolarCell is correct in saying that the starting stats of the races don't really matter in the endgame. Besides, there will be a deed that you could finish later on that will compensate for the low Will.

I usually like the Man racial traits in general though because there's one that gives you greater parry/block/evade ratings and another that gives you a massive healing skill. But mostly people pick races based on what they fancy -- it's still a role-playing game after all.
